Initially, Gray started with a modest wild-flavored tea garden in 2007, motivated by her children’s escapades with foraged food. Her enthusiasm for edible landscapes increased, prompting her to educate children about foraging and harvesting in workshops. Over time, Veld & Sea broadened its scope to provide workshops for adults, ultimately becoming a full-time enterprise.
Presently, the workshops and experiences at Veld & Sea are crafted to be practical and multi-sensory. Attendees immerse themselves in their environment, collecting, smelling, and savoring the plants they study. This engaging approach helps form lasting impressions that deepen participants’ comprehension of nature and its significance in their lives.
Veld & Sea’s diverse workshops cater to a variety of interests and tastes, highlighting seasonal activities such as coastal foraging in summer, wild food land foraging in winter, and mushroom hunting in autumn. Nevertheless, it is during spring that Veld & Sea genuinely flourishes, presenting flower workshops that exhibit the season’s vivid blossoms.
A recent event offered a sneak peek into what participants can expect from these workshops. Attendees started their day with a steaming cup of fynbos chai tea before delving into the realm of floral splendor. Hands-on tasks involved crafting headpieces adorned with roses, proteas, and pin cushions, as well as learning about the flavors, hues, and health advantages of various flowers, including cornflowers, hibiscus, poppies, and carnations.
After outfitting themselves with their floral masterpieces, guests ventured into the gardens and wild spaces to put their newfound knowledge to use. They were advised to pick only the edible flowers they planned to eat, promoting a sense of accountability and reverence for nature.
Once they returned to Veld & Sea’s Glasshouse, participants took part in floral food preparation, creating a light lunch influenced by their harvest. The meal featured a rainbow spring roll appetizer, followed by a main course of beetroot crepes accompanied by umami mushrooms, wild pesto, and cashew cream. The dessert was an inventive blend of confetti bush ice cream and a berry and chocolate cookie sundae.
Although the spring program for 2023 has concluded, visitors can anticipate a summer schedule centered on coastal foraging. Future events encompass a kelp cooking course and coastal foraging sessions. A distinctive pop-up dining experience called “Underwater Love: A Wild Food Summer Dining Experience” will also occur, commemorating the season’s abundance and the ocean’s treasures.
