Chef Christiaan Campbell, known for his dedication to the ethical and sustainable sourcing of ingredients, has taken over the reins at Tebaldi’s. Campbell’s philosophy on regenerative farming brought him to Temenos, where he manages the entire hospitality offering. “Essentially, I’m bringing sustainable, regenerative practices to the sourcing of ingredients, the way the staff is managed, and creating a menu and environment where people feel nurtured, cared for, and nourished. That’s our big focus,” says Campbell.

Inspiring country cuisine at Tebaldi’s

Tebaldi’s offers a contemporary country cuisine menu curated around what’s available closest to the restaurant. You’ll find salad leaves and herbs from a permaculture project in the village, free-range eggs and chickens from down the road, free-range pork from Swellendam, and cheese and dairy from Ashton. The menu is short and constantly changing, according to what is freshest. Mead-glazed chicken breast, confit chicken and roasted artichoke, and Kalahari flank steak are just some of the delicious items to choose from. The menu is designed for you to linger over two to four savory dishes for a leisurely meal or just savory and sweet for a quick lunch.

The Tebaldi’s wine list is also short and changes each month, featuring 14 wines, mostly from small wineries that take soil, people, and community into account. The wine selection is designed with a strong soil-health and people-health focus, making it perfect for pairing with delicious dishes.
